Born into a family of Mexican restaurateurs, Beatriz grew up in the kitchens of her parents’ two restaurants. Arriving in France at the age of just 18, on her father’s advice, she enrolled in the Paul Bocuse Institute in 1999. She immersed herself in French culture and language and made new connections and acquaintances, including Matthieu Marcant, who became her husband and now works alongside her.
Thanks to her training and hard work, the chef took her first steps in renowned haute cuisine restaurants. She started in 2000 at the Michelin-starred restaurant La Belle Otero, now called Carlton, in Cannes, before joining the team of renowned chef Pierre Orsi in Lyon, where she learned rigor and discovered hospitality in all its aspects: from the kitchen to the dining room, from the reception to the office. She returned to Mexico for 6 months and participated in the opening of her parents’ third restaurant, but eager for discovery and adventure, Béatriz decided to return to Europe and stay in Italy for a year. Not wanting to end her story with France, in 2002 she returned to the Lucas Carton restaurant in Paris (one Michelin star). She quickly advanced in her career and after 5 years became the sous chef at the legendary Parisian restaurant La Grande Cascade, which has had a Michelin star since 1965. Passionate and enterprising, in 2011 she decided to open her own restaurant with her husband Matthieu Marcant, and their partner at the time, pastry chef Yannick Tranchant. They called it NEVA CUISINE. The modern and delicious cuisine quickly became a success, which prompted the couple to open a second restaurant called CORETTA. Located in front of the Martin-Luther-King Park in the 17th arrondissement of Paris, this neo-bistro offers gourmet dishes clearly inspired by traditional French cuisine, with a touch of sour and sweet/salty that the chef loves so much.
Extremely attached to her roots and family, Beatriz loves to recharge her batteries and escape to her native country, where she draws great inspiration. Deeply immersed in it, the flavors of her childhood inspire her and she prepares tacos, tamales, ceviche and other authentic Mexican delicacies with great “gust”.
Opening her own Mexican restaurant in France was a natural choice. In February 2021, she launched Taco Mesa, first as a pop-up: tacos for takeout and delivery with the authentic, caliente (hot) flavors of her childhood. Initially conceived as street food, the chef turned the place into Tacos a mesa (tacos at the table). It offers a sophisticated menu where the play of textures and aromas causes a true explosion of flavors and takes us to the streets of Mexico.
