Chef Vanessa Robuschi, France
Question De Goût Restaurant, Marseille – 1 toque Gault&Millau (12.5/20)
She grew up in Nice in a family that worked in hospitality: her father was pastry chef, and a few of her relatives were restaurant owners.
As a young girl at first she chose architecture, but gave it up after she had finished her diploma degree and picked gastronomy. Her first teacher was Gérald Passédat, the famous chef with three Michelin stars, and after obtaining her license, she worked alongside Lionel Lévy at his Une Table au Sud restaurant.
She opened her own restaurant Question De Goût in 2008 in Marseille. In 2014 she won at the first Talents Gourmands Crédit Agricole competition in the hospitality category, and in 2015 she took part in the sixth season of Top Chef. Question De Goût has around 60 seats and is always full for lunch – because 90% of her customers are business people. Yet, it is also attractive in the evening for dinners for couples, or on weekends for family lunches.
Vanessa Robuschi describes her cooking as “intuitive” because she creates the menu every day based on what she finds at the Marseille food market. Her “Holy Trinity” on the plate consists of vegetables, fruits and aromatic herbs.
