Chef María José San Román
Although she graduated from the Faculty of Law and Language, the Spanish chef is today one of those responsible for positioning the city of Alicante and the province of Valencia on the map of Spanish haute cuisine. María José San Román owns 4 restaurants in Alicante. She received a Michelin star for Monastrell in 2003.
Curiosity, innovation and enthusiasm are her main characteristics. In her recipes, she combines innovation alongside the Mediterranean tradition on a daily basis, with expertise, precision and maximum commitment to local ingredients.
She is known for using pomegranates from Alicante in gastronomy, as well as advancing traditional rice dishes from eastern Spain. She earned the title of queen of saffron by researching the importance of this spice, not only for a touch of taste and color, but also for improving other ingredients in recipes.Chef San Román’s dishes revive the tradition of local flavors but they are , superbly presented in the most creative way. Her Mediterranean cuisine is healthy, refined, light and innovative.
