Chef Jure Tomič, Slovenia

Ošterija Debeluh, Brežice
4 G&M toques (17.5/20), Michelin recommended

The magnificent performance of the owner of Ošterija Debeluh in Brežice, only thirty kilometres from Zagreb, has earned him the Great Chef of Tomorrow trophy, four Gault&Millau Slovenia toques and membership in JRE (Jeunes restaurateurs d’Europe), as well as a recommendation by the Michelin guide for Slovenia.

His plates focus on only three or four ingredients, but always of top quality and locally farmed. Baker by vocation, self-taught in the kitchen, chef Tomič cooks with indigenous ingredients of his region and believes they have to keep their original flavour – but more often than not he creates daring combinations. He raised open fire cooking to another level. He is the winner of the Barilla Pasta Word Championship and he participated in the EXPO Milan 2015.

Three years ago he received the prestigious Service Award in Europe out of 330 members of JRE. Every year he visits several food festivals, culinary conferences and competitions – where he finds inspiration and ideas for creating unforgettable new experiences at his restaurant.
