Every tasting menu that Fabricio Vežnaver prepares in his restaurant Pergola in a small Istrian place Zambratija, is a true gastronomic journey. For his miraculous creations, the chef uses exclusively local products, that, same as the side dishes or techniques, must be different from one course in the order, and a top quality presentation is implied.
Gault&Millau Croatia, a prominent international gastronomic guide, in 2019 awarded chef Vežnaver the Trophy of the Great Chef of Tomorrow. Recently he was awarded again, but this time by Gault&Millau Trophy Chef of the Year 2021 and the guide awarded Pergola by 4 toques Gault&Millau. Beside that, his Pergola won the Michelin Guide recommendation and have joined to JRE (Jeunes restaurateurs d’Europe). Chef Vežnaver is the proud brand ambassador of Tommy company.
Before he finally decided to join the family restaurant business, he became one of the first sommeliers in Croatia. He quickly turn the family tavern into a top food design restaurant where guests at first glance may not be able to recognise what is on their plate, but experience explodes in their mouth at the first bite. In the end, his wife Ljiljana, without whom – as he says – today’s Pergola would not exist, sweetness everything with her unsurpassed desserts.
