Chef Fabien Torrente, France
Bubo Restaurant, Marseille – 2 toques Gault&Millau (13/20)
The culinary career of this young chef from Marseille started some ten years ago, during which he advanced quickly from sous chef at several hotels to opening his own restaurant.
He opened Bubo in 2018 with the help – both creative and physical – from his friend Grégory Goutoulli. Their concept thrilled the fans of bistronomy who enjoy the taste of local ingredients, and Fabien Torrente is in touch with their producers all the time. They are all highlighted in the menu, and his idea is to serve dishes in bento style. However, if the container is Japanese (the Japanese serve a whole meal in bento boxes, from starter and soup to the main course and dessert) – the flavours are Mediterranean, Provençal. Each meal is in accordance with the restaurant’s interior, which is modern and light, just as the duo wanted it.
Thanks to friendly prices and great quality, it is one of the most popular places in Marseille.
